Here in Thailand, the sliced tomato is the only part of the papaya salad that isn’t tart, sour, salty or tear-your-face-off spicy. And it’s also the part most people never eat, so I’m getting a good taste of sliced tomatoes every time I sit down to eat with my family. As a painting subject, the tomato presents an interesting satin finish sheen to a rich and challenging red.
